The variety of walnuts that we cultivate and commercialize are of Californian origin, except the Trompito which are of Argentine origin and the walnut Lara that is of French origin.
Within all the American varieties, we have selected the most modern that better adapt to the climatic and pedologic conditions of our plantations and those varieties that offer the best quality of the grain.
Although the origin of the variety is Californian, our technology allows us to obtain a quality and sizes very superior to the walnuts that are normally commercialized from that same origin.
The technology of the processing of the nut is also very important .The harvesting at the right moment, an appropriate drying and a strict selection of the nuts of better quality, allows us to offer a product with an authentic taste without chemical compounds that can alter the natural qualities of the nut. This way we unite the best quality and the most modern techniques of cultivate to obtain the best nut of the market.
The actual criteria for measuring the quality of the walnuts are as follows:
Flavour: Although each consumer can have his own preferences, the market prefers a nut that is not bitter. Each variety has its own natural specific taste that identifies it and is related to the floral aroma, the sweetness and the oily consistency. However,even as important as the variety is processing of the walnut.The correct process of drying and storage, that does not incorporate any chemical conserving Products, is essential to obtain a natural and exquisite taste for the palate.
Colour of the grain: the market and the consumers prefer the walnuts of a light colour. The variety of Californian nut that we cultivate is one of the lightest in the world.
Size of the grain: The walnuts considered of greater quality are those of a larger size. A large walnut generally has a large grain. It also has to be considered what part of the endocarpio is occupied by the grain necessary to also consider that it leaves from endocarpio is occupied by the grain what is its degree of separation of the pit wall.

This variety was patented by the University of California in 1979.evolving from a crossing of the varieties Pedro and 56-224. It is a very productive tree of moderate size. Its harvest is medium to late (end of September). This variety is progressively prevailing in the Californian plantations.
The shell is slightly oval, smooth and sealed well. It is also opened easily (49%).
It stands out for having a large grain (6.3 grams), and also as it is one of the lightest ones of the market, almost a pearl colour (90%or more). Its taste is slightly sweet and its oily consistency is very pleasant on the palate.
It is a sister variety of the CHANDLER. It is a tree of medium size and very productive. Its harvest is made in the middle of September. This variety is being very successful in the new plantations of California together with the CHANDLER.
The shell is a little bit more rounded than that the CHANDLER and has a good seal. It can be opened easily.(50%).
The size of its grain is large (6,0 grams) and of the highest quality. It is a variety that is very light in colour 90% or more, and its taste is very much appreciated by the consumers.
A walnut obtained in the French nursery of Lalanne, in La Gironde. It is a small- medium tree whose harvesting is done during the first fortnight of August (for fresh consumption).Due to the climatic characteristics of our plantations, we obtain the LARA during the first fortnight of August. One month earlier than in France or Belgium.
The form of the nut is round and its size is great. It is specially indicated for the fresh consumption owing to the high performance of its grain, the facility of shelling, and its taste.
it is a less well-known variety in Europe but it has a great commercial interest. Its origin comes from the crossing of Conway - Mayette with Payne created in the university of California in 1958. It is a very very small tree but has a great yield. The harvesting of this one variety is early. The shell has a good seal and a yield of 48% in its opening. The grain is large (6,5 grams) and it is quite light. Its flavour is very characteristic and is one of the awarded varieties more in walnut tasting competitions.
this one variety arises from the crossing of Payme and p1 159568 created in 1958 in the university of California. The tree is very vigorous and very productive and its harvesting is early. The nut and the grain are of a large size (6 grams), very light and of excellent quality. It is a nut very indicated to commercialize without its shell. Its flavour is excellent due to its high content in oil and its sweetened flavour.
Fruit of the crossing of lompoc and p1 159568 created in 1965 by the university of California. It is a very productive tree of moderate size. Its harvest is medium to late.
The nut and the grain are particularly large (9,9 grams) and has a high performance in the ease of opening (58%). The shell is slightly oval and the seal is very good. the color is light although not as much as the chandler or the howard. Its flavour is very sophisticated and very suggestive to the palate.
This walnut is from the Agentine selection that comes from an unknown Californian variety. The tree is moderately vigorous and very productive and its harvesting is medium to early.
The nut is large and longish with a characteristic ‘spinning top’ form. Is colour is very light, comparable to the Chandler. Its flavour is excellent and it has a very ageeable aroma.
This variety comes from a cross between the Tehama and the Serr created in the University of California in 1966. tree is vigorous and very productive and its harvesting is early.
Thw nut is quite large,round,and well sealed. It can be opened easily(53%). The shell is light and very big (9,9 grms) its flavour is sweet and much appreciated by walnut specialists.
